The Ingredients
Flour tortillas
Tomatoes, roughly cut
Grated, strong cheddar
A pinch of dried basil or coriander
Chopped Pepperoni slices, or green or red chilli, or both
Light oil for brushing
The Method
Put the grated cheese, tomatoes, pepperoni, chilli and basil/coriander into a mixing bowl, then mix up well.
Put a little oil in a frying pan and once hot add a tortilla. Put the cheese mix over one half of the tortilla. Fold over the other half to make a half-moon, then press down to seal.
Cook for a couple more mins until crisp and golden, cut in half and pile onto a platter while you cook the rest.
