The Ingredients
1 tablespoon of water
2-3 eggs
Salt and pepper
Knob of butter
Filling (cheese, ham etc), or nothing and have it plain.
(Sort your filling first, i.e. grate your cheese, dice your ham etc.)
The Method
Crack your eggs (2 or 3, depending on your hunger) into a mug.
Add the water, salt and pepper (omit if your adding a sweet ingredient), and beat (stir) with a folk until it appears evenly mixed.
Heat a frying pan, to a moderate heat, and and the butter. As soon as the butter starts to sizzle (not go brown), pour in the egg mix evenly all over the pan. If needed draw the mixture to the edges
Cook for about a minute until all the egg is very lightly cooked underneath and the top is still runny and soft. The top will cook itself in its own heat when folded later.
Using something like a spatula or wide knife, free up the edges.
Put you ingredients (your filling choice), across the middle of the omelette. Cook for a further minute if you filling is cold.
Now fold either side over the filling, making a sort of envelope.
Remove from the pan and devour.
